Five Cocktails That Show Off Beet Spirit

Beet spirit is more versatile behind the bar than people expect — earthy enough to anchor a Negroni, clean enough to brighten a sour. Here are five drinks we keep coming back to.

People assume a beet spirit only works in savoury, earthy drinks. It's true that it loves a bitter, herbal partner — but it's just as happy in something bright and citrus-forward. Here are five that earn their place on our menu.

1. The Beet Negroni

The obvious one, and still the best. Equal parts beet spirit, sweet vermouth, and bitter red aperitivo. The earthiness rounds off the bitterness and gives the whole drink a deeper, almost velvety body.

Stir, don't shake — and use one big cube to keep it cold without watering it down.

2. The Nova Sour

Beet spirit, lemon, a little sugar, and egg white shaken to a silky foam. The acidity lifts the spirit's natural sweetness and the texture does the rest. Our most-ordered drink, by a wide margin.

3. Bloody Mary, Reconsidered

Swap the usual vodka for beet spirit and the whole glass makes more sense — the earthiness meets the tomato halfway instead of fighting it. A brunch staple that finally tastes intentional.

4. Apple Fizz

Long, light, and refreshing: beet spirit, pressed apple, a squeeze of lemon, topped with soda. The drink we reach for when the afternoon is warm and nobody wants anything heavy.

5. The Rude Martini

For the purists. Beet spirit, a whisper of dry vermouth, stirred down hard and served brutally cold with a twist. Nothing to hide behind — which is exactly why it works.
