The Godfather's Distillery

The story begins in Slovakia's "Bird Valley," where I grew up listening to the old masters in my godfather's distillery. Those stories of craftsmanship weren't just history—they became the blueprint for my own journey in spirits

We specialize in rare distillates from the heart of Europe, focusing on the unique, earthy character of the sugar beet. This flavor is incomparable and difficult to replace, representing a deep-rooted tradition in Slovakia.

The Process

  1. Sugar beets being harvested from rich European soil

    Sugar beets are hand-selected from regional farms at peak ripeness, when natural sugar content is highest.

  2. Artisans manually preparing beets by washing, peeling, and slicing

    Manual Prep

    Each beet is washed, peeled, and sliced by hand — a deliberate process that honours the raw material.

  3. Beet mash undergoing slow enzymatic fermentation in traditional vessels

    Enzymatic Fermentation

    Natural enzymes break down starches into fermentable sugars over days — patience is the secret ingredient.

  4. Spirit being distilled through a traditional copper pot still

    Copper Distillation

    Double-distilled in a hand-forged copper pot still, the spirit emerges pure, smooth, and full of terroir character.

Behind Apollo-Nova

Maroš Potůček

Founder

Maroš Potúček is one of Europe’s most respected bartenders. After years in London at the prestigious Bar Termini, he returned to Slovakia with a clear vision – to create a distillate that speaks the language of origin. Winner of the Falstaff Bar & Spirits Award – Best Bartender of Slovakia.

Mária Juríková

sales manager

Mária Juríková brings extensive experience in project management, international trade, and brand building and distribution to the Apollo Nova team. Her strategic thinking and strong sense for business opportunities play a crucial role in shaping the growth and long-term direction of the project.

Martin Hudák

Brand manager

Martin Hudák is a key contributor to the development of Apollo Nova, bringing years of experience from the global bartending scene. He works as a consultant at Ritual Consultancy, focusing on innovative concepts, education, and the development of hospitality projects worldwide. Within Apollo Nova, he is also responsible for the visual direction and product design, in collaboration with Adrián Juráček from Malina Studio.

Oli Džupinková

PR manager

Oli Džupinková is a long-standing professional host and a well-known figure in the Slovak media landscape. She spent many years at Radio Expres, the most-listened-to radio station in Slovakia. She currently works as a podcast manager for Forbes Slovakia. She is also the author of several gastronomy-focused books, and her extensive network and creative projects reach far beyond Slovakia.
